LE CORDON BLUE COLLEGE OF CULINARY ARTS NOW FIVE YEARS OLDChef Kirk Bachmann and Executive Chef Heinz Lauer were inducted into the International Food and Beverage Forum Hall of Fame at the fifth anniversary of Le Cordon Bleu in Las Vegas. An elegant six-course dinner paired with wines honored the occasion.
ROY’S ISLAND HOP DINNER Delicacies from throughout the Hawaiian Islands pleased palates at the fourth annual Roy’s Island Hop Dinner. Both “Sounding the Conch Shells” and “Hawaiian Story Telling” acknowledged Kauai with, respectively, “Sunset” Yamaguchi sushi roll and imu smoked pork shank; “Lighting the Tiki Torch” with herb and garlic grilled yellow fin ahi steak cassoulet and “Sway of the Hula,” olive oil poached lamb loin, saluted Roy’s original Hawaii Kai at Oahu. The Big Island concluded the feast with “Under the Hawaiian Moon” sweet mango butter cake. Oberon Sauvignon Blanc, Merlot, and Cabernet Sauvignon and Cab Special Reserve accompanied the meal.
