Chart House restaurants have been known nationally for their waterfront locations and water views -- either one a tough proposition in Las Vegas. So at the Golden Nugget's new Rush Tower, designers are bringing the water to the Chart House.
Tilman Fertitta, chief executive officer of Landry's Restaurants Inc., parent company of the Golden Nugget, said when the Open Table reservation service listed the 50 best restaurant views in the country, Chart House locations occupied 10 spots.
"We wanted to keep that," Fertitta said. "If people come to this Chart House, they'll agree that this is one of the best views in America."
The 200-seat restaurant, which opens Friday, will be centered by a 75,000-gallon, floor-to-ceiling aquarium filled with more than 1,000 tropical fish. The oceanic theme is further reflected by the use of colors inspired by the sea.
Fertitta said the company retooled the Chart Houses after buying the chain 10 years ago and since has expanded the 24 locations to 30. The Golden Nugget's Chart House, he said, represents the beginning of another era for the chain and will be rolled out in other locations in the next 18 months.
"The restaurant business is a quick-moving industry," Fertitta said. "You have to stay on top of it."
The menu is a mix of Chart House classics and specialty items unique to this location. Appetizers include stone crabs, an iced seafood tower and fried asparagus. The Chart House Chopped Salad remains on the menu along with the chain's iconic Chart House Souffle and Chocolate Lava Cake, and entree selections are split between fish and seafood selections including macadamia-crusted mahi mahi and Lobster Francese and a selection of steaks, prime rib, lamb and poultry.
